I have 3.00/10 tires and I cant find tubes that size with straight valve stemsut: I can get 2.75/10 or 3.50-4.00/10 do you think either of these will work?

Yup either of those will work. I would use the 2.75 because there's less of a chance of the tube getting wrinkled up in the tire. Basically the first number is width and the second is rim diameter. The tube will expand and take up the extra .25 inch.
