I'd sleave a block and run Parson's 71mm piston with an ARC long rod.
Your not going to find too many stroker cranks, but increasing your bore and running a good cam and big vlave head will get you where you want to go with your kart.
If you have enough track the longer rod and over bore will trump the stroker.
