I am not familiar with the carb system, so I figured out something was wrong with the spring by looking at my sister's identical bike.
When the spring was pinched and you started it, did you have the chain off or the back tire off the ground? What should happen is you start it choked, and just as you open the choke the RPM goes up applying the clutch and the bike should take off violently. This happens because the governor cannot move the throttle to the idle position with the spring pinched.

The chain was off... and I though it was fine, but with the chain on, it tried to run away on me!
Thanks for the info. I'm a little lost when it comes to carbs.
