Sensation chopper build, drive train help!

Sensation chopper build, I'm need help in figuring out what size clutch and rear sprocket to use? Here's the details,
1) Tires are 4.00-5 and are about 12"tall
2) Engine I'm using is a Tecumseh HS50 (5hp) 3/4' shaft
3) Rear Sprocket is a 66 tooth size 35 but is worn out
4) and I'm pushing about 180 lbs

when I look up clutches, they list 11, 12, tooth etc and diff launch rpms, and what ratio would work best to move me, at 55 I'm not much of a speed freak , just need to pull the hills at the Carlisle swap meets. any help would be much appreciated, thanks, Billy

To make it easy, larger rear sprocket or smaller clutch is more torque. So an 11/66 would be about ideal. 6:1 ratio...
